  • 1.5 cups of flour
  • 1 teaspoon of baking powder
  • 2 large eggs
  • 120 g butter
  • ½ cup of espresso
  • 0.5 teaspoon vanilla extract
  • 1 cup of brown sugar or 1/2 cup of stevia

preparation

  • Bring the butter to room temperature. If you’ve stored them in the refrigerator, take them out and let them sit in a bowl for about 25 minutes.
  • Grease your bread pan well with a little butter.
  • Heating your oven to 200 ° C before.
  • It is important that the sugar is finely ground. You can easily chop it up with a hand blender.
  • As soon as the butter has reached room temperature and is nice and soft, you can stir it in a bowl with a mixer until frothy.
  • While mixing, add the sugar very slowly and beat everything until the mixture is nice and creamy.
  • Now gradually add the eggs. Beat each egg under the mixture for about 30 seconds before adding the next one. This makes the mass even looser.
  • Then you pour in the coffee and stir a little more.
  • Let everything rest for a moment.
  • Meanwhile, sieve the flour into a bowl, add baking powder and vanilla extract and then slowly pour the butter and sugar mixture onto the flour. Mix everything thoroughly with a whisk or wooden spoon.
  • Avoid clumping.
  • When the batter is well mixed, you can put it in a bread pan and put it in the oven.
  • As soon as the bread is in the oven, you should reduce the temperature to 180 ° C. Let the bread bake for 30 minutes.
  • You can use a wooden stick to check that the bread is ready to bake. You use it to stab the bread briefly and then pull the chopsticks out again. The bread is ready when the stick is dry. If there is still moisture on it, leave the bread in the oven for another 5 minutes and do the test again.
  • When the bread is ready, take it out of the baking pan and let it cool before you eat it.

If you have diabetes, you should sweeten  the bread with stevia instead of sugar.  And don’t forget that you have to pay attention to the units of bread that you eat every day. In this way you can prevent your blood sugar level from rising too high and putting yourself at risk.

2. Crunchy oatmeal espresso cookies

The crispy walnuts round off the whole thing perfectly. It will surely become one of your new favorite desserts. You should this delicacy but only in moderation enjoy, because these delicious cookies provide you with a lot of energy … and unfortunately with calories.

  • 2 ½ cups organic oatmeal
  • 1 teaspoon of baking powder
  • One teaspoon of natural salt
  • 1 tablespoon of espresso
  • 120 g butter
  • ⅔ cup of maple syrup
  • three eggs
  • ⅔ cup of whole milk
  • 1 cup chopped walnuts
  • ¾ cup of fresh raspberries (finely chopped)

preparation

  • Slowly melt the butter in a saucepan over low heat, then let it stand. You will need it a little later.
  • Then mix the oatmeal, baking powder, salt and espresso in a bowl.
  • In a second bowl, mix the maple syrup with the milk and eggs. Keep stirring until all of the ingredients have combined well.
  • Then you pour the contents of both bowls together and mix all the ingredients together well. Let it rest for 10 minutes.
  • In the meantime you can preheat the oven to 150 ° C. Place a piece of parchment paper on a baking sheet and lightly brush it with a little butter. You can also put the cookies directly on the baking sheet, then you will need more butter to grease the sheet.
  • Now carefully lift the walnuts and raspberries into the batter.
  • Now you can use a spoon or your hands to shape small, approx. 5 cm large balls out of the dough.
