Peel and dice the onions and garlic. Heat 2 tablespoons of oil, sauté the garlic and onions until translucent. Add to the beetroot.

Add the balsamic crema, sugar and tomato paste and puree everything together. Then pour in the rest of the oil, continuing to puree. Strain the finished ketchup through a sieve. Season to taste with salt, pepper and mustard.
