- If you want to make the vegetable stock yourself, put 2 liters of water in a saucepan. Add celery, onion, carrots and garlic cut into pieces. Salt the broth to taste and cook for about 40 minutes. Put them aside. Alternatively, you can heat 1.5 liters of water and dissolve the ready-made vegetable stock in it.
- Clean the mushrooms and cut them into small pieces. Lightly fry them in the pan with olive oil and a little garlic. Put them aside.
- Cut the onion into small cubes and fry it in a pan in olive oil. Then add some butter and stir well.
- Put the rice in the pan and fry it for 2 to 3 minutes.
- Add the white wine while stirring and let it boil off.
- Then add the mushrooms to the rice and pour a ladle of vegetable stock over them. You have to stir well all the time now.
- Repeat this procedure (add the stock, stir, let it boil) until the rice is cooked through. This takes about 17 minutes.
- Take the rice off the stove and add the rest of the butter and grated parmesan.
- Stir well again and serve the risotto.
