The big part of rice is starch, which in turn is made up of amylose and amylopectin. The properties of each variety of rice depend on which of these two substances is the predominant one. For example, if the proportion of amylopectin is higher, the grains are more sticky.

Korean rice or bibimbap recipe: step by step
Just a bit before we get to the actual recipe for bibimbap : should you wash the rice before cooking or not? In Asian countries in particular, rice is often washed before cooking.
It used to be common practice to wash rice. This was used to remove possible parasites or deposits between the grains. However, today there are conflicting views on the matter. For example, some cooks recommend washing the rice to remove excess starch and make the rice “looser” and others argue that it is not necessary.
But according to the US Food and Drug Administration (FDA) , washing rice before cooking could also lead to the following: namely, that some of the folic acid, iron and vitamins are lost. Therefore, when making this recipe for bibimbap, we choose not to wash the rice.
Ingredients for Korean bibimbap
- 1 cup of Japanese rice (also known as “sushi rice”)
- 300 grams of ground beef
- 1 cup of spinach
- 1 large carrot
- 10 large mushrooms
- 2 eggs
- 1 cup bean sprouts
- 80 grams of kimchi
- Salt (to taste)
- Oil (required amount)
Ingredients for the marinade of the meat
- 2 tablespoons of soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon of garlic powder
- 1 teaspoon mirin (Japanese cuisine sweet rice wine) (optional)
Ingredients for the gochujang sauce
- 2 tablespoons of gochujang (Korean spice paste)
- 1 tablespoon of water and rice vinegar (optional)
- 1 teaspoon sesame oil, sugar and sesame seeds
- Salt (to taste)
preparation
- First mix the soy sauce with sesame oil, garlic powder and mirin to make the marinade for the meat.
- Then let the minced meat marinate a little in the sauce you just prepared. It is not necessary to leave the meat in the sauce for a long time. About 7 minutes are sufficient.
- Now fry the meat in a pan or wok. Then set aside for a moment.
- Now put some oil in a saucepan, heat it and then add the rice and fry a little. You have to stir constantly so that the rice doesn’t burn or stick to the bottom.
- After about a minute, add two cups of boiling water and salt, if you like. Then simmer over low to medium heat until the rice is ready (about 10 minutes or as stated on the package).
- Then wash, peel and cut the carrots into strips. Also cut the mushrooms into slices.
- Now wash the spinach and bean sprouts well.
- Then heat some oil in a wok and fry the carrot strips in it for one to two minutes. You do the same with the mushrooms. They should get crispy.
- Now fry the spinach and then separately the bean sprouts. You have to be a little careful. Because they are done very quickly.
- To prepare the gochujang sauce, put all the necessary ingredients in a bowl. Now mix them well together until you get a smooth sauce. If you prefer a less spicy sauce, you can just use one tablespoon instead of two tablespoons of gochujang .
- Now prepare two fried eggs.
This is how you arrange bibimbap on your plate
- Bibimbap, or Korean rice, can be served in a deep plate or small bowl.
- First you put a rice base in the plate.
- Then you distribute the other ingredients on the rice. In such a way that they are grouped by color, as you can see in the picture above.
- Finally, arrange a fried egg in the middle.
- The gochujang sauce is served separately. Each guest adds them to their bibimbap as they wish.

- You can also convert this recipe into a vegetarian dish. Then you just use tofu instead of minced meat.
- You can also try other types of vegetables. Green beans, zucchini, red onions, pepper – or whatever you like!
