Pork Loin With Blue Cheese

We chose blue cheese for this recipe not only because of its intense taste and aroma, but also because it becomes so deliciously creamy when melted. This goes particularly well with the pork loin , which sometimes dries out a little while cooking.
Regarding the cooking method, we would like to explain to you right away that you can do without a pan at all, as the loin is baked in the oven. We cook a delicious and juicy dish in less than 60 minutes.

Pork loin with blue cheese
Ingredients (for 3 to 4 people)
- 1/4 cup fried onions (50 g)
- 1/4 cup white wine (50 ml)
- 5 pork loin fillets (750 g)
- 1/2 cup heavy cream (125 ml)
- 1 teaspoon hot paprika (5 g)
- coarse salt and herbs of Provence for seasoning
- olive oil
- 2 1/2 cups blue cheese (about 500 g)
- your choice: fresh parsley, butter or sour cream
preparation
- First we preheat the oven to 200 degrees.
- Then we clean the meat and put it in an ovenproof dish. There we bathe it in plenty of olive oil and season it with salt. Then we let it marinate for 15 minutes and then brush it with the hot paprika.
- We then put the fillets in the oven for 20 minutes at 220 degrees.
- After 15 minutes of baking time, we open the oven and pour the white wine over the fillets. Then we put them back in the oven.
- We also cut the blue cheese into more or less thin slices.
- We then put the cream in a saucepan and heat it over medium heat. Just before it boils, we add the blue cheese slices. We keep stirring so that the two ingredients mix and create a creamy sauce.
- When the cream is boiled, we add the herbs of Provence and let them simmer for another 2 to 3 minutes. If it doesn’t take on a firmer consistency, we can help with a little butter or cream.
- After the fillets are cooked they come out of the oven and we can bathe them in the blue cheese sauce. You can garnish the plates with a little parsley or a pinch of Provence herbs before serving.
The dishes accompanying the pork loin with blue cheese should have a subtle taste so that they do not compete with the aroma of the cheese sauce. It’s also best to avoid garlic. In the following we have a few more suggestions for you.
Apple compote as a side dish to pork loin with blue cheese
Ingredients (for 3 to 4 people)
- 1 stick of cinnamon
- 8 red apples
- 1 cup of water (250 ml)
- 1/4 cup sugar or honey (100 gr)
- Optional: juice of one lemon
preparation
- First we wash and peel the apples. We take out the kernels and cut the rest into thin strips.
- We then heat the water with the apples on a high flame in a saucepan.
- When it starts to boil, we reduce the flame to half and add the cinnamon, lemon juice and sugar.
- Then we let everything simmer for about 45 minutes.
- When the time is up, we take the pot off the stove and the cinnamon stick out of the pot and then put them on a plate.
- Then used a hand blender to puree all the ingredients into a puree.
- Then we pour the puree into a bowl and add the cinnamon stick again. It can be served hot or cold.
Another side dish that goes wonderfully with pork loin is fried potato sticks, about the size of a match. This gives the dish a crispy note and you can season it with either a little salt or hot paprika.
